Japanese Eggplant Seedling
Hands-down our favorite eggplant, this variety has a thinner skin than Italian eggplant and a creamier flesh. We love these simply cut in half and grilled with olive oil and salt. Typically ready for harvest about 2 weeks before most eggplant varieties. This eggplant is long and slender, with a dark purple skin. Harvest when the fruit is roughly 8 - 10” in size, is firm, and has dark, glossy skin, and if you harvest regularly, you’ll stimulate further production.
